A refined sugar-free dessert that both children and adults will love. You can also sprinkle the popsicles with fresh mint leaves or a little lemon zest before serving.

Sugar-free watermelon popsicles with lemon

Prep time: 15 mins | Waiting time: 4-5 hours | Total time: 15 mins | Serves: 6

Ingredients

for 6 popsicles

  • 800 g watermelon (net weight, measured without rind or seeds)
  • juice of 1 lemon
  • 1-2 tbsp honey or agave syrup (depending on the sweetness of the watermelon)
  • a few fresh mint leaves

Directions

  1. For the watermelon, lemon and mint popsicles, cut the prepared watermelon into pieces and blend along with the lemon juice, mint leaves and your sweetener of choice until smooth.
  2. Taste and add more sweetener if required.
  3. Pour the mixture into the popsicle moulds, insert the sticks and place them in the freezer for 4–5 hours, or overnight, until completely frozen.
  4. To unmould, briefly run under warm water.
