How to Sterilize Glass Jars
- Remove the lids, wash the jars thoroughly and place them, along with the lids, in a pot of water deep enough to cover them completely.
- Simmer for 15 minutes. The water should be kept at a gentle simmer rather than a rolling boil, otherwise the jars may crack.
- Meanwhile, preheat the oven to 100°C. Place the jars upside down on a baking tray lined with a clean kitchen towel, with the lids alongside them and leave in the oven for a further 15 minutes.
Easy Homemade Apricot Jam

Ingredients
for 3 medium jars
- 1½ kg apricots
- 900 g sugar
- juice of 1 lemon
- 2 cups water
Directions
- For the apricot jam, wash the apricots, cut them in half and remove the pits. Cut again into quarters and place them in a heavy-bottomed pot in alternating layers with the sugar.
- Add the water and bring to a boil over medium heat, reducing the heat if the mixture boils too vigorously and begins to splatter.
- Skim off any foam with a slotted spoon and stir frequently to prevent the jam from sticking to the bottom of the pot.
- When the jam has thickened and appears clear and glossy, add the lemon juice and bring it to a final boil. The jam is ready when a few drops of syrup placed on a chilled plate do not spread.
- Immediately divide the hot jam among the sterilized jars. Seal with the lids, turn the jars upside down and leave them to cool completely.
- Once fully cooled, turn the jars upright and store them in a cool, dark place.
