Tzatziki is one of the most classic Greek sauces, made with strained yogurt, grated cucumber and garlic. In many versions, herbs such as dill are also added, as its aroma blends perfectly with the sauce.

Authentic Greek tzatziki

Ingredients

  • 200 g full-fat strained yogurt

  • 1 garlic clove, finely chopped

  • 1 small cucumber

  • 2–3 tbsp finely chopped dill

  • salt
and freshly ground black pepper

Directions

  1. To make tzatziki, first grate the cucumber.
  2. Place it in a strainer, add a little salt and leave it to drain for 15 minutes (the salt will help release excess moisture). Then squeeze it well with your hands and set aside.
  3. In a bowl, combine the yogurt, dill, garlic and grated cucumber and mix well.
  4. Season with salt and pepper, mix again and serve.
