Nothing spells summer quite like a juicy watermelon and a refreshing mojito. This easy twist on the classic Cuban cocktail combines both into a fruity, refreshing drink that's perfect for gatherings on hot evenings.

The combination of a cocktail with watermelon, brings the ultimate summer mojito.
You do’t really need much. Invite a few friends over, turn on fairy lights on the balcony, take a few slices of watermelon, some lime, brown sugar and a little spearmint from the pot and start.
Watermelon mojito
Ingredients
- 1 thin slice watermelon
- 1 measure rum (40 ml)
- ½ lime
- 10 spearmint leaves (and extra for garnish)
- 1 tbsp brown sugar
- soda water
- ice
Directions
- For the watermelon mojito, cut the watermelon into small pieces, making sure to remove the seeds.
- Put the pieces in a glass and add the lime in slices, the spearmint leaves and the sugar.
- With a pestle or with the back of a wooden spoon, press the ingredients well so they are well mashed, releasing their aromas and flavours.
- Add plenty of ice to the glass, then the rum and top up with soda water.
- Garnish with a little watermelon and extra spearmint leaves.
