Nothing spells summer quite like a juicy watermelon and a refreshing mojito. This easy twist on the classic Cuban cocktail combines both into a fruity, refreshing drink that's perfect for gatherings on hot evenings.

You do’t really need much. Invite a few friends over, turn on fairy lights on the balcony, take a few slices of watermelon, some lime, brown sugar and a little spearmint from the pot and start.

Watermelon mojito

Ingredients

  • 1 thin slice watermelon
  • 1 measure rum (40 ml)
  • ½ lime
  • 10 spearmint leaves (and extra for garnish)
  • 1 tbsp brown sugar
  • soda water
  • ice

Directions

  1. For the watermelon mojito, cut the watermelon into small pieces, making sure to remove the seeds.
  2. Put the pieces in a glass and add the lime in slices, the spearmint leaves and the sugar.
  3. With a pestle or with the back of a wooden spoon, press the ingredients well so they are well mashed, releasing their aromas and flavours.
  4. Add plenty of ice to the glass, then the rum and top up with soda water.
  5. Garnish with a little watermelon and extra spearmint leaves.
